Zucchini Casserole

  • 1 lb. hamburger
  • 1/2 c. chopped onion
  • 3 small pared zucchini, sliced and cubed
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. bread crumbs (boxed seasoned ok)
  • 1 c. cheddar cheese, grated
  • Parmesan cheese
  • 2 small cans tomato sauce


Fry hamburger. Add onion and cover with lid until onions are transparent.


Grate crumbs. Grease casserole; put 1/2 meat mixture, 1/2 zucchini, with crumbs in first layer. Sprinkle with cheese. Repeat layer. Add tomato sauce. Bake at 350 for 50–55 minutes.


One half, or less, serves 6.
