Seafood à la King
Recipe Source: “Keep Cooking –
The Maine Way” by Marjorie Standish
Combine:
• 1 cup canned lobster, crab meat or tuna
• 3 diced hard-cooked eggs
• 1 chopped pimiento
Sauté and add:
• 1/2 cup chopped mushrooms
Cook in boiling water until tender; drain and add:
• 1/4 cup chopped sweet red peppers
Prepare:
• White sauce (see page 341 of cookbook)
When the sauce is smooth and boiling, add the above ingredients. Season to taste and add:
• 1 tsp. Worcestershire sauce
• 1 tbsp. lemon juice or 2 tbsp. dry white wine
Serve the seafood over:
• French toast, rusks, patty shells, or au gratin in ramekins.
Or garnish with toast triangles spread with:
• Mashed avocado and lemon juice
