Caramel Apple Scones

Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 tbsp. brown sugar
  • 1-1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 3 tbsp. cold butter
  • 1/4 cup plus 2 tbsp. half and half cream
  • 1 large egg yolk, room temperature
  • 1-1/2 tsp. vanilla extract
  • 2/3 cup shredded peeled apple
  • 1 tbsp. caramel ice cream topping


Directions

In a small bowl, combine the flours, brown sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk the cream, egg yolk and vanilla; add to dry ingredients just until moistened. Stir in apple. Turn onto a floured surface; knead 10 times.


Pat dough into a 5-inch circle. Cut into 4 wedges. Separate wedges and place on an ungreased baking sheet. Bake at 400* for 15-20 minutes or until golden brown. Cool scones for 10 minutes. Drizzle with the caramel ice cream topping.
