Betty Mosher's Boston Baked Beans

• 3 c dried beans (use any beans; navy are my favorite

• 2 tsp salt

• 2 tsp dry mustard

• 4 TBS brown sugar

• 5 TBS molasses

• 1/4 lb salt pork (optional)


Pick over beans, rinse and soak over night.


Simmer for one hour in the morning.


Pour into 2 qt bean pot (or crock pot) with the soaking water.


Combine salt, mustard, sugar and molasses and add to beans.


If using salt pork, place on top of beans and bake 8 hours in 325 degree oven adding more water as needed. 


If using crock pot, put on low and cook 5-6 hours.
